TRADITIONAL KARI PAKORA RECIPE

The Ultimate Kari Pakora Recipe: Secrets to Super Soft Pakoras and Perfect Creamy Kadhi

There is nothing quite like a warm bowl of Kari Pakora served over a bed of steaming white rice. It is the ultimate South Asian comfort food—rich, tangy, slightly spicy, and deeply satisfying.

 

However, making the perfect Kari Pakora is an art. A common complaint is that the pakoras turn out too hard, or the gravy (kari) becomes too thick or lumpy. In this guide, we break down the authentic step-by-step process to ensure your Kadhi Pakoda turns out flawless, velvety, and incredibly flavorful every single time.

Ingredients :

For the Pakoras: 

* 2 cups gram flour (besan)

* 1 medium onion, thinly sliced

* 2 green chilies, finely chopped

* 2 tbsp fresh coriander, chopped

* 1 tsp red chili powder

* ½ tsp turmeric powder

* 1 tsp crushed coriander seeds

* ½ tsp cumin seeds

* Salt to taste

* ½ tsp baking soda (optional, for extra fluffiness)

* Water as needed

* Oil for deep frying

 

For the Kari

* 1 cup gram flour (besan)

* 1/2 kg plain yogurt

  • 1.5 litrewater

* 1 tsp turmeric powder

* 1 tsp red chili powder

* Salt to taste

 

For the Tempering (Tarka)

* 3 tbsp oil

* 1 tsp cumin seeds

* 8–10 curry leaves

* 3–4 dried red chilies

  • . Slice onion 1 small

 

 

Method:

Step 1: Prepare the Pakoras

  1. In a bowl, combine gram flour, onion, green chilies, coriander, spices, salt, and baking soda.
  2. Gradually add water to make a thick batter.
  3. Heat oil over medium heat and drop spoonfuls of batter into the hot oil.
  4. Fry until golden brown and crispy.
  5. Remove and place on paper towels.

 

Step 2: Prepare the Kari

  1. Whisk together gram flour, yogurt, turmeric, red chili powder, salt, and water until completely smooth.
  2. Pour into a large pot and cook over medium heat while stirring continuously until it comes to a boil.
  3. Once boiling, reduce the heat and simmer for 35–45 minutes, stirring occasionally until the kari thickens.

 

Step 3: Add the Pakoras

  1. Add the fried pakoras to the simmering kari.
  2. Cook for another 10–15 minutes so the pakoras absorb the flavors.

 

Step 4: Prepare the Tarka

  1. Heat oil in a small pan.
  2. Add onion slices fry until golden brown then add cumin seeds, curry leaves, dried red chilies,
  3. Fry for about a few seconds until fragrant.
  4. Pour the hot tempering over the kari.
