Step-by-Step Instructions: Mastering the Kebab

Step 1: The Infusion Simmer

Place the mutton, soaked Chana Dal, aromatics, and your “Spice Pouch” (Potli) into a pot. Add water and simmer until the meat is completely tender and the water has fully evaporated.

Chef’s Tip: Ensure the mixture is dry before grinding. Any excess water at this stage will make the kebabs difficult to shape.

Step 2: The Thermal Grind

Discard the whole spice pouch. While the mixture is still hot, grind it in a traditional mortar and pestle or a food processor. Adding the Poppy Seeds at this stage ensures they are evenly distributed, creating a natural matrix for the meat fibers.

Step 3: Folding in the Freshness
