The Art of Restaurant-Style Smoky Mutton Karahi: An Authentic Recipe from Emaar Karachi

In the vibrant spectrum of South Asian culinary tradition, the Karahi occupies a place of high honor. Whether enjoyed at bustling highway dhabas or upscale dining establishments, a well-executed Mutton Karahi is a true celebration of bold flavors and tender meat.

 

Today, Sister’s Cuisines shares the secrets behind the iconic Smoky Mutton Karahi (Coal Dhungar Karahi)—prepared against the scenic backdrop of Emaar Oceanfront Karachi.

 

The Magic of Freshly Roasted Karahi Masala

Pre-packaged store spices simply cannot replicate the aromatic intensity required for a genuine restaurant-style karahi. The backbone of this recipe is a bespoke spice blend. Whole cumin seeds, coriander seeds, black peppercorns, fragrant green cardamoms, and whole dried red chilies are gently dry-roasted in a pan until warm and aromatic.

 

🛒 INGREDIENTS LIST:

  • For the Karahi Base:

  – 1.5 kg mutton

  – ½ cup ghee

  – 7–8 tomatoes, sliced

  – 5 green chilies, chopped (plus more for garnish)

  – 1 tbsp ginger-garlic paste

  – Julienned ginger & fresh coriander for garnish

  – Salt to taste & 2 tbsp butter (optional)

  – 1.5 liters water (or as required)

 

  • Our Freshly Roasted Karahi Masala:

  – 2 tbsp cumin seeds

  – 2 tbsp coriander seeds

  – 1 tbsp black peppercorns

  – 4–5 green cardamoms

  – 8–10 whole dried red chilies

  – 1 tsp dried fenugreek leaves (Kasuri Methi) 

 

Method

  1. Heat the ghee in a large karahi over medium-high heat.
  2. Add the mutton and fry until it changes color and starts browning.
  3. Season with salt, then add the ginger garlic paste. Cook until the raw smell disappears and the meat releases its moisture. Continue frying until the liquid evaporates and the meat is well roasted.
  4. Add the sliced tomatoes, chopped green chilies, julienned ginger, and 2½ tbsp of the prepared Karahi Masala.
  5. Cook for a few minutes, stirring occasionally, until the tomatoes soften.
  6. Pour in 1.5 liters of water, cover, and cook until the mutton is tender.
  7. Once the meat is fully cooked, remove the lid and cook on high heat until the gravy thickens and the oil separates.
  8. Add the remaining fresh green chilies, julienned ginger, fresh coriander, and 2 tbsp butter (optional). Mix gently.
  9. Give the karahi a smoky coal (dhungar) finish for an authentic restaurant-style flavor.

💡 Pro-Tip: Searing the mutton in pure ghee with ginger-garlic paste until it releases its juices and browns before adding water locks in flavor and completely eliminates any raw meat smell!
