At the heart of this dish is the balance between the heavy, dairy-rich mushrooms and a zesty, bright garlic butter rice. Guided by Nabila Imran, we utilize professional French techniques—like the classic roux—and high-quality local ingredients to ensure a gourmet success in your home kitchen.

What Makes This Recipe a Gourmet Success?

Achieving a sauce that is thick, glossy, and stable requires more than just mixing cream and mushrooms. We rely on three specific pillars:

  1. The Nestlé Milkpak Secret

For a sauce that doesn’t “break” (separate into oil and water), the quality of the cream is paramount. We use Nestlé Milkpak Cream for its consistent fat content and rich dairy notes. It provides the professional finish and mouthfeel that makes this dish feel like a celebration.

  1. The Silk-Smooth Roux Base

To avoid a thin or lumpy sauce, we start with a Roux. By sautéing all-purpose flour in butter before adding milk, we create a thickening agent that binds the cream and mushroom juices into a sturdy, velvet-like coating.

  1. The Zesty Rice Contrast

Creamy mushrooms can be quite “heavy” on the palate. To balance this, our Herb Rice is steamed with 100g of butter, fresh garlic, and lemon pepper. The citrus notes from the lemon pepper act as a palate cleanser, making every bite feel fresh.

2 tbsp All-purpose flour (Maida), 1 tbsp Chicken powder

Aromatics

1 small Onion (chopped), 2 tbsp Garlic (chopped)

Spices

Crushed black pepper, Mixed herbs, Salt

For the Herb Rice

Basmati rice (Boiled to 70% “Al Dente”)

Flavor Base

100g Butter, 1 tbsp Garlic (Chopped)

Seasoning

1/2 tsp Lemon pepper, 1 tsp Chicken powder

Greens

Spring onion greens, Fresh Coriander

Step-by-Step Instructions: Mastering the Duo

Step 1: Crafting the Creamy Mushrooms

  1. Sauté: In a wide pan, melt the butter and sauté the onions and garlic until soft. Add the sliced mushrooms and cook until they release their moisture and turn golden.
  2. The Roux: Sprinkle the flour over the mushrooms and cook for 1 minute to remove the raw flour taste.
  3. Thicken: Gradually pour in the milk and water, whisking constantly to ensure no lumps form.
  4. Enrich: Stir in the chicken powder, spices, and mixed herbs. Once the sauce thickens, fold in the Nestlé Milkpak Cream. Simmer on low heat for 2 minutes and set aside.

Step 2: The Garlic Butter Herb Rice

  1. Infuse: In a separate pot, melt the 100g of butter. Sauté the garlic until fragrant but not brown.
  2. Season: Add the lemon pepper and chicken powder to the butter.
  3. Steam: Fold in the parboiled rice. Add the spring onion greens and fresh coriander. Cover and let it steam (Dum) on very low heat for 5–7 minutes until the rice is fully cooked and aromatic.
