Elevating Your Baking: The Chipotle Chicken Stuffed Bread Ring

Baking at home is a journey of textures, and few things are as rewarding as a stuffed artisanal loaf. At Sister’s Cuisines, we’ve taken the traditional stuffed bread and given it a bold, smoky makeover inspired by international street food flavors.

The Science of the Dough

The secret to this recipe is the “Enriched Dough.” By adding egg, milk, and butter (Step 1), we create a crumb that is significantly softer and more flavorful than standard bread. The butter is added after the initial flour mix to ensure the gluten develops properly, giving you that elastic, professional stretch.

Why Chipotle?

Chipotle adds a sophisticated “wood-fired” smokiness that standard chili powder simply can’t match. When the smoky chicken is paired with the creaminess of mozzarella (Step 2), it creates a balanced interior that complements the sweetness of the milk-based dough.

Mastering the Shape

The “Ring” shape isn’t just for aesthetics; it allows for even heat distribution during the bake. By cutting slits in the dough before the final roll (Step 4), we create vents for steam to escape, which prevents the bread from bursting while creating a beautiful, professional braided look.

Ingredients

For the Signature Dough:

  • All-purpose flour – 260 g (2¼ cups)
  • Active dry yeast – 5 g (1½ tsp)
  • Sugar – 17 g (1 tbsp + 1 tsp)
  • Salt – 5 g (¾ tsp)
  • Egg – 1 large (50 g)
  • Warm milk – 125 ml (½ cup)
  • Unsalted butter – 30 g (2 tbsp), softened

For the Smoky Chipotle Filling:

  • Chicken breast – 1 cup (diced)
  • Chipotle paste – 1 tbsp
  • Chipotle pepper paste – 1 tsp
  • Onion powder – ½ tsp
  • Garlic powder – ½ tsp
  • Smoked paprika – ½ tsp
  • Black pepper – ½ tsp
  • Salt – to taste
  • Capsicum (Bell pepper) – ½ (diced)
  • Mozzarella cheese – 3–4 slices

Method

  1. Craft the Dough: In a bowl, combine warm milk, sugar, and yeast. Let it sit for 5–10 minutes until foamy. Add the egg and salt, then gradually mix in the flour to form a dough. Incorporate the softened butter and knead for 8–10 minutes until smooth and elastic. Cover and let it rise in a warm spot for 1–1½ hours until doubled in size.
  2. Prepare the Chipotle Filling: Mix the diced chicken with chipotle pastes and all seasonings. Sauté the chicken in a pan until fully cooked. Add the diced capsicum and cook briefly to retain a slight crunch. Crucial Step: Let the filling cool completely before stuffing to prevent the dough from becoming soggy.
  3. Assemble the Ring: Roll the risen dough into a large rectangle. Spread the cooled chicken and mozzarella slices along one long edge. Roll the dough into a log, leaving the opposite side flat.
  4. The Design & Shape: Cut even slits on the remaining flat side of the dough. Finish rolling so the slits sit decoratively on top. Curve the log into a circle, joining the ends to form a ring. Place on a parchment-lined tray.
  5. The Bake: Preheat your oven and bake until the bread is golden brown and the cheese is beautifully melted inside.
