Why Kashmiri Red Chili?
We use Kashmiri Red Chili (Step 2) because it provides a brilliant, deep red hue without the overwhelming heat of standard chili powder. This allows you to use a full tablespoon to get that restaurant-look while keeping the dish family-friendly and flavorful.
The Science of Scoring
Scoring (Step 1) isn’t just for aesthetics. It increases the surface area of the meat, allowing the marinade to penetrate. More importantly, it helps the chicken cook more evenly and faster, which prevents the outside from burning before the inside is safely done.
Ingredients
- Chicken: 2 kg (pieces)
- Aromatics: Ginger garlic paste (2 tbsp), Dried fenugreek leaves/Kasuri methi (1 tbsp)
- The Spice Palette: Cumin powder (2 tbsp), Paprika powder (2 tbsp), Coriander powder (3 tsp), Garam masala (1 tbsp), Turmeric powder (½ tsp), Kashmiri red chili powder (1 tbsp)
- Binders & Acids: Natural yogurt (2 tbsp), Olive oil (3-4 tbsp), Lemon juice (3-4 tbsp)
- Seasoning: Salt to taste
Method
- Preparing the Meat: Wash the chicken and pat it dry with paper towels. Pro-Tip: Dry skin allows the oil in the marinade to stick better. Make deep diagonal cuts (scores) into the thickest parts of the meat. This ensures the heat and spices reach the bone.
- The Marinade Architecture: In a large bowl, whisk together the yogurt, ginger garlic paste, lemon juice, and olive oil. Add all your dry spices. Mix until you have a smooth, thick, and vibrant red paste.
- The Massage: Apply the marinade generously. Don’t just coat the chicken; use your hands to “massage” the paste deep into the cuts you made earlier. This is the secret to a uniform flavor profile.
- The Resting Phase: For that signature “Melt-in-Mouth” texture, patience is key. While 30 minutes works in a hurry, an overnight marination in the refrigerator allows the lemon juice and yogurt to tenderize the proteins deeply.
- The Perfect Grill: Preheat your grill to 205°C. Place the chicken on the rack and grill for about 20 minutes, flipping halfway through (10 minutes per side). You are looking for a slight char on the outside while keeping the inside succulent.
